Default Saag Aloo (spinach and potato curry)

It's cold outside and I'm in need of something spicy to banish the Winter blues!


Serves 4, Cooking time 25 min

Ingredients:

60 g butter
5 cm piece fresh ginger, peeled and grated
4 garlic cloves chopped
2 green chillies chopped
2 onions chopped
200 g potatoes, peeled and cut into small cubes
1 tsp cumin powder
1 tsp turmeric powder
¼ tsp salt
500 g spinach leaves, roughly chopped
a pinch garam masala

Method:

Melt the butter in a large saucepan over medium heat. Fry the ginger, garlic, onions and chillies, stirring frequently, for 2 minutes.

Add the potatoes and continue stirring for 5 minutes. Then add cumin, coriander, turmeric and salt. Continue frying and stirring for 15 minutes, or until potatoes are tender. If the mixture starts to stick to the pan then add a little vegetable oil or a splash of water.

At the end of the cooking time throw in the spinach, as it makes it stay nice and fresh tasting.

To serve sprinkle over a pinch of garam masala and if you like a squeeze of lemon juice.

Delicious as a side dish for your favourite curry or with chapattis for a simple lunch.
